Tags: #recipe #entree # Skillet Cabbage and Sausage Recipe ## Ingredients - Spicy Italian Sausage, not in a casing (1 lb) - Onions, diced (1 cup) - Green Cabbage, cut into strips (1 1/2 lbs or 1 head) - Garlic, minced (3 cloves or 3 tsps) - Thyme - Grated Nutmeg (1/4 tsp) - Apple Cider Vinegar (2 tbsp) ## Directions 1. In a heavy cast iron skillet over medium high heat, cook the loose sausage until not longer pink. 1. Add a little olive oil to the skillet if needed, but it probably won’t be. 2. Add the diced onions and continue to cook until onions soften and sausage browns. 3. Chop up some cabbage into bite-size strips. Be sure to avoid the harder parts of the cabbage by removing a lot off the bottom/center. 4. Add the grated garlic and thyme to the skillet and cook another minute until fragrant. - Garlic, minced (3 cloves or 3 tsps) - Thyme 5. Add cabbage to the skillet a handful at a time, stirring as you go to assist wilting. Continue until all cabbage has been added and is wilted. 6. Add oil and a little salt as you add the cabbage, as needed. 7. Add the nutmeg and salt and pepper to the skillet and stir. 8. Add apple cider ginger to the skillet and scrape up and brown bits and stir for a minute to cook off the harshness of the vinegar. 9. Serve immediately!
